Homemade chicken broth is one of the easiest ways to get a little more out of what you already have in the kitchen. I save chicken bones and scraps, toss everything into a pot with a few simple ingredients, and let it simmer into a rich homemade broth.
It’s easy, inexpensive, and one of those staples that’s worth keeping on hand for soups, sauces, rice, and just about anything else that calls for broth.

Keep a bag in the freezer for chicken bones and vegetable scraps and add to it as you cook. When the bag is full, it’s broth day. You can also freeze the finished broth in portions so it’s easy to grab exactly what you need.

- Place the chicken carcass, onion, carrots, celery, garlic, bay leaves, and peppercorns in a large stockpot.
- Add enough water to cover everything, about 10 cups.
- Bring to a gentle boil, then reduce the heat to low and simmer partially covered for 3–4 hours. Skim off any foam that rises to the surface if needed.
- Remove the pot from the heat and carefully strain the broth through a fine-mesh strainer. Discard the bones and cooked vegetables.
- Taste and season with salt as desired.
- Cool the broth promptly, then transfer it to containers and refrigerate or freeze.
