- Heat the olive oil in a saucepan over medium heat.
- Whisk in the flour and cook for about 1 minute, stirring constantly.
- Add the chili powder, cumin, garlic powder, onion powder, oregano, and salt.
- Cook for another 30 seconds, stirring constantly.
- Slowly pour in the chicken broth while whisking to prevent lumps.
- Whisk in the tomato sauce.
- Bring the sauce to a gentle simmer.
- Cook for 8–10 minutes, stirring occasionally, until slightly thickened.
- Taste and adjust the salt or seasonings as needed.
- Use immediately or allow to cool before storing.
Notes
Chicken broth: Homemade chicken broth adds great flavor, especially if you're already roasting a chicken for enchiladas. Store-bought broth works perfectly well.
Chili powder: Chili powders can vary quite a bit in flavor and heat. If yours is particularly spicy, start with less and add more to taste.
Consistency: The sauce should thicken slightly as it simmers but still be easily pourable. Remember that it will continue to thicken a little as it cools.
For enchiladas: One batch makes roughly 3 cups, which is enough for a generously sauced 9×13-inch pan of homemade chicken enchiladas.
Storage: Let the sauce cool completely before refrigerating in an airtight container.
